There are small pocket types (that you can carry with you at all times), right up to big bowie stye that you can split wood with. There are different kinds for different jobs, so if your just going to pick one, it should be kind of an all purpose one. Some of the survival kind come with a compass on the end of the handle, and a hollow handle, that you can store stuff inside, like fishing line, hooks and water proof matches.
Most knives are made out of stainless steel, but there's different grades and different content in each of the grades. Top of the line is S30V steel, D2 steel (and you'll be able to tell by the price) and then the high carbon steel blades are generally more durable because of the carbon and vanadium content. The lower grade stainless steel (sometimes black coated) are cheaper to buy, don't hold a edge as long, but are easy to re-sharpen and are rust proof because of the chromium content.
With a good knife, you should have a good sharpener. You can get stones, hones, ceramic sticks, carbide, steel or just a good old fashioned leather strop. Any one of them, will put that keen edge on your blade.
I have about six different good quality knives and probably as many poorer quality ones, but they can still perform a job, and that my friend, is what counts.
